Culinary specialties of Corsica

Elle est la première cheffe à avoir rejoint les JRE (Jeunes Restaurateurs) en France et elle cumule pour son éthique, les distinctions de « Master’s of Meat » et « Cheffe exemplaire à suivre »… Formée à l’école Alma à Colorno, en Italie, parmi les 120 chefs sélectionnés pour rejoindre le programme Smart Climate Chef grâce à leur engagement, elle poursuit le sien très poussé à sa table créative de l’Hérault. D’abord en pratiquant le kilomètre zéro en matière de sourcing, quitte à s’interdire nombre de produits si leur culture sur place n’est pas idoine : remplaçant ainsi la salade par la salicorne ou les algues, en supprimant le melon, les œufs dans les desserts, le maïs au profit du pois chiche.

Même vigilance avec « l’égalité des espèces » : le poisson est pris chez les petits pêcheurs du bassin perpignanais sélectionnés pour leur pratique éthique. Poisson qu’elle fait maturer pour mieux le conserver, et utiliser toutes les parties sans exception. La viande ne vient que d’abattoirs respectueux et elle utilise par exemple la graisse de ses cochons maturée pour lier les sauces. Elle a supprimé de ses ustensiles le siphon, trop énergivore, elle travaille différentes préparations à partir d’un même arrivage de produits pour réduire les empreintes d’eau et énergétiques. Bien au-delà du sourcing, c’est tout le fonctionnement et l’approche de son menu unique qui fait l’objet d’une réflexion globale bien en amont. 

« S’il change tout le temps, mon menu ne souffre pas les adaptations car il est pensé pour être le plus neutre en carbone. À terme, j’aimerais le devenir complètement… »
