In Vallesaccarda (AV) in Italy’s Campania region, the Oasis Sapori Antichi has been an institution for decades. A place where the inspiration of different generations of the Fischetti family has come to light, the stoves of this traditional restaurant are now in the hands of chef Michelina Fischetti. The Oasis tradition is brilliantly perpetuated by the brigade inspired by the savoir-faire of "mamma" Giuseppina. The Ricotta ravioli with walnut sauce and burnt garlic, made with hand-stuffed pasta, are a real pleasure to eat. The flavors of Italy’s terroir take on a very special dimension here.
