Olivier Chardigny - Chef
In Vonnas, Auvergne-Rhône-Alpes, L’Ancienne Auberge 1900 continues the tradition inherited from the Blanc family’s three generations of Mères Cuisinières, before Georges took over. The chef has sought to preserve the authenticity of the origins, including in the decor and furnishings: the floor is of terracotta tiles, the framework is visible, the tables are of thick wood and the tablecloths are checkered. The menu is naturally designed in the same way. Using local produce, chef Olivier Chardigny likes to reinvent the traditional dishes of our respective grandmothers, adding a touch of modernism for a consistently delicious result.
